Hawaiian Pizza Ingredients:
1 package of pizza dough
1-1/3 cup pizza sauce (ideal to cover a pizza in a 15-in. x 10-in. x 1-in. pan):
2 cans (12 ounces each) tomato sauce
1 can (8-12 ounces) tomato paste
1 tablespoon Italian herbal seasoning
1 tablespoon dried oregano
1 to 2 teaspoons fennel seed, finely crushed
1 teaspoon onion powder
1/2 teaspoon salt
3 cloves of garlic, minced
1 cup favorite ham, chopped
1/2 cup of green onion, chopped
6-7 slices of pineapple
8 oz. mozzarella cheese (adding other cheeses is optional)
Directions: Prepare Pizza Sauce
1. In a large saucepan over medium heat, combine tomato sauce and paste.
2. Add remaining ingredients; mix well.
3. Bring to a boil, stirring constantly.
4. Reduce heat; cover and simmer for 1 hour, stir occasionally; and cool.
Directions: Prepare pizza
1. Pre-heat the oven to 450 degrees.
2. Prepare dough, as directed on back of the package.
3. Spread with pizza sauce.
4. Top with sliced ham (sprinkled), rings of pineapple, chopped green onion, and cheese.
5. Bake for about 15 minutes {+/-}; or until golden brown.
6. Allow it to cool for 5-10 minutes; then slice and serve hot (melting cheese on freshly baked pizza dough, with sauce).
Ultimately, hop into the New Year with a hot, oozing Hawaiian Pizza Pie. Pizza serves great with your favorite beverage (carbonated drink preferred).

Baking is an art with science. It is a delicate process that involves precision and lot of patience. It is also said to be one of the best stress busters of all time.
I began my baking journey when I was in 8th class. My first bake was chocolate cookies for my mother on her birthday. It was nowhere close to what was mentioned in the recipe book I was referring to. Still she relished and appreciated it with each bite. After her persuading comments I thought of tasting my cookies. It was a total disaster. But my mother's expressions motivated me to bake for her again. I vowed to give her that taste for real which she was describing while eating my cookies.
I decided to undergo baking classes. During my summer vacations I enrolled with Cookery expressions.
Those were one of the best classes I had ever been part of. It was a pure delight for all my five senses. The sweet aroma of fresh cakes, colorful cupcakes, crisp cookies and mouth watering chocolates were my inspiration to go for the classes regularly. Our teacher was a self learned baker and was too good at her job. She knew everything starting from breads, different varieties of cakes, cupcakes, cookies, chocolates and much more.
"Baking is not just an art, it's an art with science" was her first words. She taught us how important it is to measure every single ingredient while baking. Even a slight variation in quantity can adversely affect our desired results. Our class was full of amateur bakers. It sounded as if we were in our chemistry lab. She shared all her cake baking secrets with us.
I am sharing those useful secrets today through this article.
1. It's highly important to know your oven. If any error, always calibrate it correctly.
2. Flour used for cake should contain less protein.
3. Baking pan has to be of proper size. Should not be too big or too small.
4. Baking butter should be used at room temperature always. We should not try to melt it artificially by heating it.
5. Always fold in the dry ingredients and liquid ingredients separately.
6. After preparing the cake batter, never leave it out for too long. It is advisable to put the cake batter inside a pre heated microwave oven within five minutes of preparing it.
7. Last but not the least, it is highly recommended to understand the chemistry behind using every single ingredient.
a. Flour thickens the batter.
b. Leavener like baking soda causes the cake to rise.
c. Fats provide necessary moisture to the cake.
d. Sugar caramelizes, absorbs liquid and helps the cake to turn brown.
e. Egg used helps the cake batter to set in the oven and gives an even texture to the cake.
After understanding this logic behind baking one can mix and match the ingredients and experiment with his/her recipe in their own style.
Those ten days of baking classes were an enriching experience of my life. Hope these tips will come handy and help you become an expert home baker.

Quinoa and Vegetable Bake (Gluten Free, Protein Packed and DELICIOUS)

When you're a vegetarian such as I am and you're always trying to get the correct balance between carbohydrates & protein we often get stuck with meal ideas, It is so difficult trying to think of healthy meal ideas everyday right?
So, here is my protein packed 'Quinoa casserole' a healthy & delicious recipe for you and your family to enjoy, it is easy to make and you can modify it to your taste or simply incorporate different vegetables if you like.
Quinoa is a fabulous option for vegetarians, it's a natural grain (Gluten free) and can be eaten hot, cold, in savory dishes, as a breakfast option and even desserts & puddings!
This dish is perfect during the cold winter months, so heart warming and very good for kids too!
First off we need to prepare our homemade Tomato & Basil sauce.
Ingredients for tomato basil sauce:
1 Can of Organic diced tomatoes
2 Tbs of Organic tomato Purée
1-2 Tbs Olive oil
1 Large onion
2 Cloves of garlic
4-5 Baby Bella mushrooms chopped
Fresh Basil leaves finely chopped
Salt/Pepper
1/2 Tsp Sugar
Red Chilli flakes
In a deep bottom pan, heat the Olive oil with the garlic and chilli flakes and allow to heat together so the garlic infuses into the oil.
Once the garlic is a little sautéed add the onion and cook then, soon after add the mushrooms and raise the heat, do not allow the mushrooms to release any moisture, we want our tomato sauce to have a thick consistency.
Once mushrooms have cooked a little add in the tomato purée and canned tomatoes, then season it up with salt, a little pepper, sugar and finally add the chopped basil and allow to cook for a few mins.
What you need is a thick 'pulp like' consistency (almost like the ready prepared pasta sauces in jars).
Give it a little taste make sure the salt and chilli is flavored in well to taste.
Once cooked set aside and allow to cool.
Ingredients for Quinoa & Vegetable layers:
1 Cup Organic Quinoa - Use uncooked (I use TruRoots)
1 Large Corgette (Zuchinni) or Yellow squash
1/2 Cup of Tex Mex cheese (you can add more if desired)
Wash the veg well and then slice the squash/corgette into medium thick slices, coat with a very small amount of olive oil to give a slight crunch.
Preheat your oven to 350 degrees.
Prepare a Pyrex casserole dish or an oven proof baking tray by oil spraying lightly.
Add a ladle full of tomato sauce on the base of the casserole dish, followed by layers of corgettes, sprinkle a generous layer of Quinoa, followed a generous layer of tomato basil sauce, then followed by cheese.
NOTE: Make sure you have covered the quinoa with a generous amount of tomato sauce as this will help with cooking the quinoa really well, otherwise you may end up with uncooked and crunchy quinoa!
Now repeat the process, do this until you've achieved 3 full layers, finally top it off with as much or as little of cheese.
Place the dish into the oven and cook for approximately 35-40 mins.
Once cooked, insert a toothpick to check that all quinoa and veg has cooked to perfection!
This dish is very versatile, as I mentioned previously you can change the vegetables of your choice, however, try not to use any veg that is likely to release moisture such as spinach, I would suggest carrots as a good option and eggplant sliced works perfect!

Your Best Recipes May Be the Best Gift of the Season

People who love to cook, and I'm one of them, are always on the lookout for recipes. We clip them from magazines, troll the Internet, and keeping buying cookbooks. Tantalizing recipes always seem to be calling us. Relatives and friends have asked me for recipes and I share them willingly.
Chinese almond cookies are one of my best recipes. A friend gave me the recipe years ago and I modified it to suit my tastes. From the first bite, to the last crumb, these cookies are a winner. My grandson thinks they are so good I could sell them at street fairs. Your favorite recipes could become a welcome gift. Answer these questions before you get started.
Are you going to share general recipes or limit choices to one category? Choose recipes that represent you, such as homemade yeast and quick breads. Think of the gift recipient as well. A friend who doesn't bake won't appreciate cookie recipes, for example. On the other hand, this same friend may appreciate five-ingredient recipes.
How many will you share? One Christmas I made cookbooks for relatives. The collection came from Nana's recipe boxes. I printed out the recipes on holiday stationery, put them in plastic sleeves, assembled them in three-ring binders, and put Nana's photo on the cover. Since this was a labor intensive process, I limited the number to 25. You may also want to include a photo with each recipe.
What printing method will you use? You may put recipes on 3" x 5" cards, or enter them in your computer, and print them out on 8 1/2" x 11" paper. The file card method requires handwriting, whereas the computer method allows you to create multiple gifts. Whether you handwrite recipes or print them out, they should be easy to read. Do not print recipes in a cursive font.
Will your gift or gifts include samples? If you share cookie recipes, your gift may include a dozen cookies. Bread recipes may include a loaf of French bread. Jam and jelly recipes may include a sample in a decorative jar. At this time of year, cooking supply manufacturers produce holiday jars, decorative lids and tins.
Do you need to credit a cookbook author or relative? This is a precautionary measure, and you may not have to do it. Still, it's nice to credit a family member or friend. You may credit the person in the title, such as Aunt Edith's All Beef Meatloaf. It's my understanding that making three changes to a recipe, title, measurement, ingredients, make the recipe yours.
Are you going to add something extra? You may put a collection of slow cooker recipes in a new cooker. Candy recipes may be packaged in a candy dish or jar. Casserole recipes may include a lasagna pan. When I made cookbooks for family members, I included a rubber spatula with each one. Once you start thinking about extras, you will come up with dozens of ideas.
Family members and friends will appreciate your gift because it is so thoughtful. They will appreciate it even more if you share recipes they have wanted for years. Good recipes and good food bring people together year-round.

Chicken and Green Bean Stir-Fry With Hot-And-Sour Sauce

The Thai-style sauce in this recipe brings heat to the dish with a tangy, salty, slightly sour finish. It's a flavorful complement to the earthy vegetables and tender, lean chicken.
I used thigh meat, but you can substitute chicken breast and make the stir-fry even leaner. To lessen the heat in the sauce, simply omit one of the chiles or reduce the amount of sambal oelek.
Both sambal oelek (ground fresh chile paste) and nam pla (fish sauce) can be found in general Asian markets or in the international section of many supermarkets.
Serves 4
Ingredients
For the Sauce
  • 2 Thai chiles, finely chopped
  • 1 garlic clove, finely chopped
  • 1-inch piece of ginger, peeled and finely chopped
  • 1/4 cup chicken broth
  • 2 tbsp light brown sugar
  • 1 tbsp soy sauce
  • 1 tbsp nam pla (fish sauce)
  • 1 tbsp fresh lime juice
  • 1 tbsp sambal oelek
  • 1 tbsp water
  • 1 tsp cornstarch
For the Stir-Fry
  • 6 oz green beans, trimmed and snapped in half
  • 1 lb boneless, skinless chicken thighs, cut into thin, 1-inch strips
  • 2 tsp cornstarch
  • 2 tbsp peanut oil, divided
  • sea salt
  • freshly ground black pepper
  • 10 baby-cut carrots (or 2 very small carrots, peeled), cut crosswise into thin rounds
  • 2/3 cup chopped red or green bell pepper
  • 4 scallions, thinly sliced, white and green parts separated
  • 2 cups steamed white rice
Preparation
For the Sauce
  1. Combine the first 9 ingredients (through sambal oelek) in a bowl, stirring well to dissolve the sugar. Let stand at room temperature 15 minutes.
  2. Combine the water and cornstarch in a small bowl. Set aside. Re-stir the cornstarch mixture and combine with the sauce just before using.
For the Stir-Fry
  1. Blanch the green beans in boiling water 2 minutes. Drain and rinse under cold water. Set aside.
  2. Place the chicken in a bowl and sprinkle with cornstarch. Stir to coat well.
  3. Heat a wok over medium-high heat and add 1 tablespoon of peanut oil, swirling to coat. Add the chicken and season with salt and pepper. Stir-fry until browned and just cooked through, 7-8 minutes. Transfer the chicken to a bowl.
  4. Add the remaining 1 tablespoon of peanut oil to the wok, swirling to coat. Add the carrots and stir-fry 3 minutes. Add the blanched green beans, bell pepper, and white parts of the scallions and stir-fry 2 minutes.
  5. Return the chicken to the wok. Stir the cornstarch mixture into the reserved sauce and add to the wok. Stir-fry until the sauce thickens slightly, 2-3 minutes.
To serve, divide the rice among 4 shallow bowls. Divide the chicken mixture on top and garnish with the green parts of the scallions

A tasty combination of meat, sauce, and noodles makes this dish stretch a long way - meaning it doesn't take many ingredients to add up to big flavor. Serves 4
Ingredients
  • 8 oz extra-wide egg noodles (with or without yolks)
  • 2 tbsp olive oil, divided
  • 4 4-oz skinless, boneless chicken breast halves, pounded to even thickness
  • sea salt
  • freshly ground black pepper
  • 2 garlic cloves, finely chopped
  • 1 small onion, chopped
  • 1/2 green bell pepper, chopped
  • 4 oz button mushrooms, thinly sliced
  • 3 medium stem tomatoes (about 1 lb), chopped
  • 2 tbsp chopped flat-leaf parsley
Preparation
  1. Cook the noodles in a large pot of boiling, salted water 8-9 minutes. Drain.
  2. Heat a large skillet over medium heat and add 1 tablespoon of olive oil. Season the chicken with salt and pepper and cook until golden brown and just cooked through, 4-5 minutes per side, depending on thickness. Transfer to a plate.
  3. Add the remaining 1 tablespoon of oil to the skillet and add the garlic, onion, and bell pepper. Sauté 2 minutes.
  4. Add the mushrooms and cook until the vegetables begin to soften, 3-4 minutes.
  5. Add the tomatoes and parsley and season with salt and pepper. Cook until the tomatoes soften and the sauce thickens slightly, 5-6 minutes.
  6. Return the chicken and any accumulated juices to the skillet and turn to coat in the sauce. Reduce the heat to low and simmer until hot throughout, about 3 minutes.
To serve, divide the noodles among 4 shallow bowls and top with the chicken breasts and tomato-mushroom sauce. (Alternatively, stir the noodles into the sauce in the skillet and serve combined.)
